Turkey Stew 

Dudes, just needed a place to store this so it was accessible.

Rhiannon is due at the end of the month, gallstones and gestational diabetes are kicking her butt, so I made this. Seemed to work out well.

Turkey Stewey

1.25 lbs. Ground Turkey (Lean)
2 Tomatoes, sliced
2 cups water
3 cloves garlic
2 carrots, sliced
3 medium potatoes, cut into 1-inch cubes
Juice of one lemon
1/2 tsp dried basil
1/2 tsp dried oregano
1 tsp chile powder
dash of salt and pepper
2 tblsp. cornstarch
1/2 cup cold water

Brown turkey in large pot. Add tomatoes, garlic, 2 cups water, garlic, carrots, potatoes, lemon juice and seasonings. Bring to a boil, cover, and simmer for 15 minutes, or until carrots and potatoes are tender.

In small bowl mix cornstarch and 1/2 cup cold water. Stir into turkey mixture and cook until thickened.

Serve over whole grain noodles.
