chili recipe
- 2 lbs steak (flank or "stew meat" is fine) cut into small pieces
- Garlic powder
- Half an onion, chopped
- 5 cloves garlic, minced
- Large can of diced tomatos
- Large can of tomato sauce
- Small can of tomato paste
- 2 cans kidney beans
- 1 can pinto beans
- 1 1/2 tsp. cumin
- 1/2 tbsp. oregano
- 2 tbsp. chili powder
- 1 tbsp. Cholula, Tapatio, or other taco sauce
- 2 shots of tequila
- Salt and pepper
Brown steak in frying pan or wok, with a little garlic powder, salt and pepper, draining every so often so it doesn't get too juicy. Leave around a quarter cup of drippings in pan. Mix in onions and garlic, stir repeatedly. Cook until onion is soft. You could also saute the onion and garlic in a different pan with the drippings from the steak. Could probably grill the steak too...mmmmmm that would be good. In that case just saute the onions and garlic in oil, butter or margarine.
Transfer steak/onions/garlic to the crockpot. Drain tomatos and add. Add tomato sauce and tomato paste. Drain beans and add. Add cumin, oregano, chili powder, and taco sauce. Secret ingredient = drink one shot of tequila and pour other one into the pot. Just a couple of dashes of salt and about 1/2 tsp of pepper. Don't stir. Put on low heat and leave for about 2 hours.
Stir ingredients and add salt and pepper to taste. Leave for another couple of hours. I left mine overnight...simmered for about 12 hours before the game.
